Tilapia Foil Packets

Tilapia Foil Packets are an easy, no-fuss way to cook a healthy and flavorful meal. The fish is steamed to perfection inside the foil, locking in moisture and absorbing all the wonderful flavors from fresh herbs, vegetables, and seasonings. This method makes cleanup a breeze and is perfect for grilling or baking. Ingredients:

  • 4 tilapia fillets
  • 1 lemon, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 sprigs of fresh thyme (optional)
  • 4 large sheets of aluminum foil

Instructions:

  1. Preheat the grill or oven: If grilling, heat your grill to medium-high. If using an oven, preheat to 400°F (200°C).
  2. Assemble the packets: Lay out the sheets of aluminum foil. Place a tilapia fillet in the center of each sheet. Drizzle the fillets with olive oil and season with salt and pepper. Top each fillet with garlic, parsley, a few slices of lemon, zucchini, and red bell pepper. Add a sprig of thyme to each if using.
  3. Seal the packets: Fold the foil over the fish and vegetables, crimping the edges tightly to seal the packets completely, ensuring that no steam escapes during cooking.
  4. Cook the packets: Place the foil packets on the grill or in the oven. Cook for 12-15 minutes, or until the tilapia is opaque and flakes easily with a fork.
  5. Serve: Carefully open the foil packets (watch out for the steam) and serve the tilapia with the cooked vegetables. Enjoy straight from the packet or transfer to a plate.
