Instructions:

  1. Prepare the Marinade: In a medium bowl, combine the soju, soy sauce, sesame oil, minced garlic, grated ginger, honey or brown sugar, gochujang (if using), rice vinegar, and black pepper. Whisk until well mixed.
  2. Marinate the Pork Chops: Place the pork chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork chops, ensuring they are fully coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to penetrate the meat.
  3. Cook the Pork Chops:
