Fresh herbs like basil and parsley elevate the flavors, making every spoonful a delightful experience. Serve this soup with a slice of crusty bread for a satisfying meal that feels like a taste of the Mediterranean coast, perfect for any occasion.

Ingredients:

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1 can (28 oz) crushed tomatoes
  • 4 cups seafood or chicken broth
  • 1/2 cup dry white wine (optional)
  • 1 bay leaf
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and black pepper, to taste
  • 1/2 lb large shrimp, peeled and deveined
  • 1/2 lb firm white fish (such as cod or halibut), cut into bite-sized pieces
  • 1/2 lb clams or mussels, scrubbed and cleaned
  • 1/4 cup fresh basil, chopped
  • 2 tbsp fresh parsley, chopped
  • Lemon wedges, for serving

Instructions:

  1. Sauté the Aromatics:
    • Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook for about 5 minutes, until softened.
    • Add the minced garlic and red pepper flakes, and sauté for another minute until fragrant.
  2. Prepare the Broth:
    • Stir in the crushed tomatoes, seafood or chicken broth, and white wine. Add the bay leaf, oregano, thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes to allow the flavors to meld.
  3. Add the Seafood:
    • Add the shrimp, fish, and clams (or mussels) to the pot. Cover and cook for about 5-7 minutes, or until the shrimp are pink, the fish is opaque, and the clams have opened. Discard any clams that do not open.
  4. Finish and Serve:
    • Stir in the fresh basil and parsley, and adjust the seasoning with salt and pepper to taste.
    • Ladle the soup into bowls, ensuring each serving has a good mix of seafood and broth.
    • Serve hot with lemon wedges on the side for an extra burst of freshness.

This tomato seafood soup is a comforting and flavorful dish that’s perfect for any seafood lover. Pair it with a slice of crusty bread or a light salad for a complete meal that’s both elegant and satisfying.
