Shrimp Biryani

Shrimp Biryani is a flavorful and aromatic Indian dish that combines succulent shrimp with fragrant basmati rice, spices, and herbs. Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 cups basmati rice, rinsed and soaked in water for 30 minutes
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 3 tablespoons ghee or vegetable oil
  • 1 teaspoon cumin seeds
  • 2 bay leaves
  • 4 whole cloves
  • 4 green cardamom pods
  • 1 cinnamon stick
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder (optional)
  • 4 cups water
  • Salt, to taste
  • Saffron threads soaked in 2 tablespoons warm milk (optional)

Instructions:

  1. Cook the Shrimp:
    • In a large skillet, heat 1 tablespoon of ghee or oil over medium-high heat.
    • Add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  2. Prepare the Biryani Base:
    • In the same skillet, add the remaining ghee or oil.
    • Add the cumin seeds, bay leaves, cloves, cardamom pods, and cinnamon stick. Sauté for about 1 minute until fragrant.
    • Add the sliced onions and cook until golden brown.
    • Stir in the minced garlic and ginger, and sauté for another minute.
    • Add the chopped tomatoes and cook until they soften.
  3. Add the Spices and Herbs:
    • Stir in the ground coriander, ground cumin, turmeric powder, garam masala, and red chili powder (if using).
    • Add the yogurt, chopped cilantro, and mint leaves. Mix well to combine all the ingredients.
  4. Cook the Rice:
    • Drain the soaked basmati rice and add it to the skillet. Stir gently to coat the rice with the spice mixture.
    • Add 4 cups of water and salt to taste. Bring to a boil.
    • Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
  5. Combine Shrimp and Rice:
    • Once the rice is cooked, gently fold in the cooked shrimp.
    • If using, drizzle the saffron milk over the top.
  6. Steam the Biryani:
    • Cover the skillet tightly with a lid or aluminum foil and cook on low heat for another 5-10 minutes to allow the flavors to meld together.
  7. Serve:
    • Fluff the biryani gently with a fork.
    • Transfer to a serving dish and garnish with additional chopped cilantro and mint if desired.
