Italian Zucchini Casserole

Ingredients:

  • 4 medium zucchinis, sliced into thin rounds
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes, drained
  • 1 cup marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1/4 cup chopped fresh basil (optional, for garnish)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Prepare the Zucchini: In a large skillet, heat a drizzle of olive oil over medium heat. Add the sliced zucchini and sauté for about 5-7 minutes until slightly softened. Remove from the skillet and set aside.
  3. Cook the Onions and Garlic: In the same skillet, add a bit more olive oil if needed, and sauté the chopped onion until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Combine the Sauce: Add the diced tomatoes, marinara sauce, oregano, basil, and red pepper flakes to the onion and garlic mixture. Stir well and let it simmer for 5-10 minutes. Season with salt and pepper to taste.
  5. Layer the Casserole: Begin layering the casserole by spreading a thin layer of the tomato sauce on the bottom of the prepared baking dish. Add a layer of sautéed zucchini slices, followed by dollops of ricotta cheese. Sprinkle with some Parmesan and mozzarella cheese. Repeat the layers until all ingredients are used, finishing with a generous layer of mozzarella on top.
  6. Bake: Cover the casserole with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.
