Marinated Broccoli

Marinated Broccoli is a refreshing and flavorful side dish that transforms simple broccoli florets into a vibrant and tangy delight. By blanching the broccoli until it’s just tender and then marinating it in a zesty mixture of olive oil, lemon juice, garlic, and herbs, the broccoli absorbs a burst of fresh flavors that elevate it beyond the ordinary. This dish is perfect for picnics, potlucks, or as a healthy addition to your dinner table, offering a crunchy texture and bright, citrusy taste. The marination process not only enhances the broccoli’s natural flavor but also adds a deliciously aromatic complexity that pairs well with a variety of main courses.

Ingredients:

  • 1 large head of broccoli, cut into bite-sized florets
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions:

  1. Blanch the Broccoli:
    • Bring a large pot of salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes, until they are bright green and just tender. Immediately drain the broccoli and transfer it to a bowl of ice water to stop the cooking process. Once cooled, drain well and pat dry.
  2. Prepare the Marinade:
    • In a large bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, red pepper flakes (if using), oregano, salt, and black pepper until well combined.
  3. Marinate the Broccoli:
    • Add the blanched broccoli to the bowl with the marinade. Toss well to ensure the broccoli is evenly coated with the marinade. Cover and refrigerate for at least 1 hour, or up to 4 hours, to allow the flavors to meld.
  4. Serve:
    • Before serving, give the marinated broccoli a final toss. Transfer to a serving dish, garnish with fresh parsley, and sprinkle with grated Parmesan cheese if desired.

Marinated Broccoli is a quick and easy dish that brings out the best in this nutritious vegetable. With its bright, tangy flavor and satisfying crunch, it’s an excellent side dish for any meal, offering a refreshing change from traditional steamed or roasted broccoli.
