Ingredients:
- 3 lb beef chuck roast
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 4 large carrots, peeled and cut into chunks
- 4 medium potatoes, peeled and quartered
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- 2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)
- Fresh parsley, chopped, for garnish
Instructions:
- Season the chuck roast generously with salt and pepper.
- Set the Instant Pot to “Sauté” mode and heat the olive oil. Sear the beef on all sides until browned, about 4-5 minutes per side. Remove and set aside.
