- 2 cups pure maple syrup (preferably Grade A)

- Candy thermometer
- Heavy-bottomed saucepan
- Silicone candy molds or a greased baking sheet

- Heatproof glass measuring cup (optional)
Instructions:
- Prepare Your Equipment: Before you start, have your candy molds or a greased baking sheet ready. If using a baking sheet, you can break the candy into pieces after it hardens.
- Heat the Maple Syrup: In a heavy-bottomed saucepan, pour the maple syrup and attach a candy thermometer to the side of the pan. Ensure the thermometer is not touching the bottom of the pan.
- Boil the Syrup: Over medium heat, bring the maple syrup to a boil. Do not stir the syrup as it heats. Allow it to reach 235°F (soft-ball stage) on the candy thermometer. Once it reaches this temperature, continue to boil until the syrup reaches 300°F (hard-crack stage).
- Pour the Candy: As soon as the syrup reaches 300°F, remove the saucepan from the heat. Quickly, but carefully, pour the hot syrup into the silicone candy molds or onto the greased baking sheet. If using a baking sheet, you can pour the syrup in thin lines or puddles.
- Cool and Harden: Allow the syrup to cool completely in the molds or on the baking sheet. This may take 30 minutes to an hour.
- Unmold the Candy: Once the candy has fully hardened, remove it from the molds or break it into pieces if you used a baking sheet.
- Store: Store the hard maple candy in an airtight container at room temperature to keep it fresh.
