Dilled Pot Roast

Dilled Pot Roast is a hearty and flavorful dish that elevates the classic pot roast with a bright and aromatic twist. Ingredients:

  • 3-4 lb beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1/2 cup dry white wine (optional)
  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • Salt and black pepper, to taste

Instructions:

  1. Preheat your oven to 325°F (163°C).
  2. Heat olive oil in a large, oven-safe Dutch oven or heavy pot over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove the roast from the pot and set aside.
  3. In the same pot, add the chopped onion and garlic. Sauté until softened and fragrant, about 3 minutes.
  4. Stir in the tomato paste and cook for an additional 2 minutes.
  5. Return the beef roast to the pot. Pour in the beef broth and white wine (if using). Add the fresh dill, bay leaves, carrots, and potatoes.
  6. Bring the mixture to a simmer, then cover the pot with a lid and transfer it to the preheated oven.
  7. Roast in the oven for 3-4 hours, or until the beef is fork-tender and the vegetables are cooked through.
  8. Remove the pot from the oven and discard the bay leaves. Adjust seasoning with additional salt and pepper if needed.
