BREADED CHICKEN PATTIES

Ingredients:

  • 1 pound ground chicken (or finely chopped chicken breast)

Instructions:

  1. Prepare the Chicken Mixture:
    • In a large mixing bowl, combine the ground chicken, 1/2 cup breadcrumbs, grated Parmesan cheese, beaten egg, minced garlic, onion powder, dried parsley, paprika, salt, black pepper, and optional Italian seasoning or fresh herbs.

  2. Form the Patties:
    • Divide the chicken mixture into 4-6 equal portions, depending on the desired size of your patties.
    • Shape each portion into a round patty, about 1/2-inch thick.
  3. Coat the Patties:
    • Place the flour on one plate and the remaining 1 cup of breadcrumbs on another plate.
    • Lightly coat each patty in flour, shaking off any excess, then dip in the beaten egg, and finally coat with breadcrumbs, pressing gently to ensure the breadcrumbs adhere well.
  4. Cook the Patties:
    • In a large skillet, heat the olive oil over medium heat.
    • Once the oil is hot, add the chicken patties to the skillet, cooking for 4-5 minutes on each side, or until they are golden brown and cooked through with an internal temperature of 165°F (74°C).
  5. Serve:
    • Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.
