The slow cooking process allows the flavors to fully develop, making the beef melt-in-your-mouth tender. Serve this barbacoa in warm tortillas, over rice, or as a filling for burritos or tacos. It’s an easy and satisfying meal that’s perfect for feeding a crowd or enjoying as leftovers throughout the week.

Ingredients:

  • 3 pounds beef chuck roast, cut into large chunks
  • 3 cloves garlic, minced
  • 2-3 chipotle peppers in adobo sauce, chopped (adjust to taste)
  • 1 tablespoon adobo sauce from the chipotle peppers
  • 1/4 cup apple cider vinegar
  • 1/4 cup fresh lime juice
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cloves
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1 bay leaf
  • 1 cup beef broth
  • Salt and freshly ground black pepper, to taste
  • Optional: chopped fresh cilantro, for garnish

Instructions:

  1. Prepare the Beef: Season the beef chunks generously with salt and pepper.
  2. Make the Sauce: In a small bowl, mix together the minced garlic, chopped chipotle peppers, adobo sauce, apple cider vinegar, lime juice, cumin, oregano, ground cloves, smoked paprika, and cinnamon.
  3. Combine in the Slow Cooker: Place the seasoned beef chunks in the slow cooker. Pour the prepared sauce over the beef, ensuring each piece is well coated. Add the bay leaf and beef broth.
  4. Cook: Cover the slow cooker and cook on low for 8 hours or on high for 4-5 hours, until the beef is tender and easily shreds with a fork.
  5. Shred the Beef: Once the beef is fully cooked, remove the bay leaf and shred the beef using two forks. Stir the shredded beef back into the sauce in the slow cooker, allowing it to absorb all the flavors.
  6. Serve: Serve the barbacoa hot, garnished with chopped fresh cilantro if desired. Enjoy it in tacos, burritos, or over rice for a delicious meal.
