Ingredients:

  • 1 cup imitation crab meat or cooked shrimp, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon soy sauce
  • 1 tablespoon green onions, chopped
  • 1 tablespoon furikake (Japanese rice seasoning)

For Topping and Serving:

  • 1/4 cup shredded cheese (optional for extra creaminess)
  • Additional furikake for sprinkling
  • Nori sheets, cut into squares or strips
  • Sliced avocado, cucumber, and pickled ginger (optional)

Instructions:

  1. Prepare the Sushi Rice:
    • In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour the mixture over the cooked sushi rice and gently fold until the rice is evenly seasoned. Spread the seasoned rice evenly in the bottom of a greased 9×9-inch baking dish.
  2. Prepare the Seafood Mixture:
    • In a medium bowl, combine the chopped imitation crab meat or shrimp with mayonnaise, cream cheese, sriracha, soy sauce, and green onions. Mix until well combined.
  3. Assemble the Sushi Bake:
    • Spread the seafood mixture evenly over the sushi rice in the baking dish. If using, sprinkle shredded cheese over the top for added creaminess. Sprinkle furikake generously over the entire dish.
  4. Bake:
