Instructions:

  1. Preheat the oven to 275°F (135°C).
  2. Season the roast: Rub the beef chuck roast with salt, pepper, dried thyme, and rosemary on all sides.
  3. Sear the meat: Heat the olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Add the roast and sear on all sides until browned, about 4-5 minutes per side.

  7. Roast: Cover the pot with a lid or aluminum foil and place it in the preheated oven. Roast for 3-4 hours, or until the meat is tender and falls apart easily.
  8. Rest and serve: Once done, remove the roast from the oven and let it rest for about 10 minutes before slicing. Serve with the roasted vegetables and pan juices drizzled over the top.
