Beef Quesadillas are a delicious, quick meal that combines seasoned ground beef, melty cheese, and warm tortillas into a crispy, satisfying dish. Perfect for a weeknight dinner or a game-day snack, these quesadillas pack a punch of flavor with the addition of spices like cumin, chili powder, and garlic. The beef is cooked until it’s tender and juicy, then layered with gooey cheese inside a tortilla that’s grilled to golden perfection. Serve them with your favorite toppings like sour cream, guacamole, or salsa for a truly enjoyable experience.
Ingredients:
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8 flour tortillas
- 2 tbsp butter
- Optional toppings: sour cream, guacamole, salsa
Instructions:
- Cook the Beef: In a large skillet over medium heat, cook the ground beef until it’s browned, breaking it up with a spoon as it cooks. Drain any excess fat.
- Add Seasonings: Add the chopped onion and minced garlic to the skillet with the beef. Cook until the onion is soft, about 5 minutes. Stir in the cumin, chili powder, paprika, salt, and black pepper. Cook for another 2-3 minutes until the spices are well incorporated.
- Assemble the Quesadillas: Heat a clean skillet over medium heat. Butter one side of a tortilla and place it in the skillet, buttered side down. Sprinkle a layer of shredded cheddar and Monterey Jack cheese over half of the tortilla. Add a generous portion of the beef mixture on top of the cheese, then sprinkle more cheese on top of the beef. Fold the tortilla over to enclose the filling.
- Cook the Quesadillas: Cook the quesadilla for 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and beef mixture.
- Serve: Cut each quesadilla into wedges and serve with your favorite toppings like sour cream, guacamole, or salsa. Enjoy!
