Beef Quesadillas

Beef Quesadillas are a delicious, quick meal that combines seasoned ground beef, melty cheese, and warm tortillas into a crispy, satisfying dish. Perfect for a weeknight dinner or a game-day snack, these quesadillas pack a punch of flavor with the addition of spices like cumin, chili powder, and garlic. The beef is cooked until it’s tender and juicy, then layered with gooey cheese inside a tortilla that’s grilled to golden perfection. Serve them with your favorite toppings like sour cream, guacamole, or salsa for a truly enjoyable experience.

Ingredients:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 flour tortillas
  • 2 tbsp butter
  • Optional toppings: sour cream, guacamole, salsa

Instructions:

  1. Cook the Beef: In a large skillet over medium heat, cook the ground beef until it’s browned, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Add Seasonings: Add the chopped onion and minced garlic to the skillet with the beef. Cook until the onion is soft, about 5 minutes. Stir in the cumin, chili powder, paprika, salt, and black pepper. Cook for another 2-3 minutes until the spices are well incorporated.
  3. Assemble the Quesadillas: Heat a clean skillet over medium heat. Butter one side of a tortilla and place it in the skillet, buttered side down. Sprinkle a layer of shredded cheddar and Monterey Jack cheese over half of the tortilla. Add a generous portion of the beef mixture on top of the cheese, then sprinkle more cheese on top of the beef. Fold the tortilla over to enclose the filling.
  4. Cook the Quesadillas: Cook the quesadilla for 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and beef mixture.
  5. Serve: Cut each quesadilla into wedges and serve with your favorite toppings like sour cream, guacamole, or salsa. Enjoy!
