The Instant Pot allows you to have a beautifully cooked roast in a fraction of the time, making it a convenient yet impressive meal to serve. Pair it with steamed rice and vegetables for a complete, satisfying dinner.

Ingredients:

  • 2-3 pounds pork roast (shoulder or loin)
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons cornstarch mixed with 2 tablespoons water (for thickening)

Instructions:

  1. Prepare the Pork: Season the pork roast with black pepper and onion powder. Set the Instant Pot to sauté mode and add the sesame oil. Once the oil is hot, sear the pork on all sides until browned. This should take about 4-5 minutes per side. Remove the pork and set it aside.
  2. Make the Teriyaki Sauce: In the Instant Pot, add the soy sauce, honey, rice vinegar, water, brown sugar, minced garlic, minced ginger, and red pepper flakes (if using). Stir to combine and let it simmer for a couple of minutes to meld the flavors.
  3. Pressure Cook the Pork: Place the seared pork roast back into the Instant Pot, ensuring it is well-coated with the sauce. Secure the lid, set the valve to sealing, and cook on high pressure for 60 minutes. After the cooking time is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release for any remaining pressure.
  4. Thicken the Sauce: Remove the pork roast from the Instant Pot and set it on a cutting board to rest. Switch the Instant Pot back to sauté mode and stir in the cornstarch slurry. Cook for 2-3 minutes, stirring constantly, until the sauce has thickened to your liking.
  5. Serve: Slice the pork roast and drizzle with the thickened teriyaki sauce. Serve with steamed rice and your choice of vegetables. Garnish with sesame seeds and chopped green onions if desired.

Enjoy your delicious and tender Instant Pot Teriyaki Pork Roast!
