Salmon Tuna Patties

Ingredients:

  • 1 can (5 oz) tuna, drained
  • 1 can (6-7 oz) salmon, drained and flaked (or 6 oz cooked fresh salmon)
  • 1/4 cup breadcrumbs
  • 1 egg, lightly beaten
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 1 small green onion, finely chopped
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for frying)

Instructions:

  1. In a medium bowl, combine the drained tuna, flaked salmon, breadcrumbs, egg, mayonnaise, Dijon mustard, parsley, and green onion. Season with salt and pepper to taste.
  2. Mix well until the ingredients are fully incorporated.
  3. Form the mixture into 4 patties, about 1/2 inch thick.
  4. Heat the olive oil in a skillet over medium heat.
  5. Cook the patties for about 3-4 minutes on each side, or until golden brown and heated through.
  6. Remove from the skillet and serve hot with a side of fresh greens, or enjoy on a bun with your favorite toppings.
