Ingredients:

  • 3-4 pounds pork shoulder (also known as pork butt), cut into large chunks
  • 2 tablespoons olive oil

  • 1/2 cup apple cider vinegar
  • 1/2 cup barbecue sauce
  • 1/4 cup brown sugar
  • 1 tablespoon chili powder

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions:

  1. Prepare the Pork:
    • In a small bowl, mix together the chili powder, paprika, ground cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using).
    • Rub the spice mixture all over the pork chunks, ensuring they are evenly coated.
  2. Sauté the Onions and Garlic:
    • Set your Instant Pot to the sauté function and add the olive oil.
    • Once the oil is hot, add the chopped onion and cook until softened, about 3-4 minutes.
