Custard Creams

Custard Creams are a classic British biscuit that combines two crisp, buttery cookies sandwiched together with a smooth and creamy vanilla custard filling. These delightful treats have a delicate texture and a sweet, creamy center, making them perfect for enjoying with a cup of tea or coffee. The rich, vanilla-infused custard filling provides a delicious contrast to the light, crumbly biscuit, making them a favorite at afternoon tea or as a snack. With their elegant design and satisfying flavor, Custard Creams are a timeless biscuit that’s easy to make and sure to impress.

Ingredients

For the biscuits:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp custard powder (or vanilla pudding mix)
  • 1/4 tsp baking powder
  • 1-2 tbsp milk (as needed)

For the custard filling:

  • 1/4 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 tbsp custard powder (or vanilla pudding mix)
  • 1 tsp vanilla extract
  • 1-2 tbsp milk (as needed)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the biscuit dough: In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the vanilla extract and mix until combined. In a separate bowl, whisk together the flour, custard powder, and baking powder. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms. If the dough is too dry, add 1-2 tablespoons of milk until it comes together.
  3. Shape the biscuits: Roll the dough out onto a lightly floured surface to about 1/4-inch thickness. Use a small rectangular or circular cookie cutter to cut out shapes and place them on the prepared baking sheet. If desired, use a fork or stamp to add a decorative pattern to the biscuits.
  4. Bake: Bake the biscuits for 10-12 minutes, or until they are lightly golden around the edges. Let them cool completely on a wire rack.
  5. Make the filling: In a bowl, cream together the softened butter, powdered sugar, custard powder, and vanilla extract until smooth. If needed, add a little milk to achieve a spreadable consistency.
  6. Assemble the custard creams: Spread a small amount of the custard filling onto one biscuit, then sandwich it with another biscuit. Repeat with the remaining biscuits.

These Custard Creams are a deliciously nostalgic treat with a buttery biscuit and a smooth, creamy custard filling, perfect for any tea time or snack break!
