    • 1 cup strong brewed coffee, cooled
    • 2 tablespoons coffee liqueur (optional)
  • For Assembly:
    • 24-30 ladyfinger cookies
    • Additional raspberries for garnish
    • Unsweetened cocoa powder for dusting

Instructions:

  1. Prepare the Berry Mixture: In a bowl, combine the raspberries, granulated sugar, and lemon juice. Gently mash half of the raspberries with a fork and set aside to macerate while you prepare the other components.
  2. Make the Mascarpone Cream: In a mixing bowl, whisk the mascarpone cheese until smooth. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Gently fold the whipped cream into the mascarpone until fully combined.
  3. Combine the Coffee Mixture: In a shallow dish, mix the brewed coffee with the coffee liqueur, if using.
  4. Assemble the Tiramisu: Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy. Layer half of the soaked ladyfingers in the bottom of a serving dish. Spread half of the mascarpone cream over the ladyfingers, followed by half of the berry mixture. Repeat the layers with the remaining ladyfingers, cream, and berries.
