Ingredients:
- 1 lb beef (or chicken), cut into bite-sized pieces
- 2 tablespoons Massaman curry paste
- 1 can (14 oz) coconut milk
- 1/2 cup water or beef broth
- 2 medium potatoes, peeled and cubed
- 1 onion, chopped
- 1/4 cup roasted peanuts
- 1 cinnamon stick
- 3 cardamom pods
- 2 tablespoons fish sauce
- 1 tablespoon tamarind paste (or lime juice)
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
- Fresh cilantro, for garnish
- Cooked jasmine rice, for serving
Instructions:
- Brown the meat: Heat the vegetable oil in a large pot or skillet over medium heat. Add the beef (or chicken) and cook until browned on all sides. Remove from the pan and set aside.
- Sauté the curry paste: In the same pan, add the Massaman curry paste and sauté for 1-2 minutes until fragrant.
- Add the coconut milk and spices: Pour in the coconut milk, water (or broth), and add the cinnamon stick and cardamom pods. Bring to a simmer.
- Cook the meat and vegetables: Return the browned meat to the pan along with the potatoes and onion. Stir in the fish sauce, tamarind paste, and brown sugar. Cover and simmer for 30-40 minutes, or until the meat is tender and the potatoes are cooked through.
- Add peanuts: Stir in the roasted peanuts during the last 5 minutes of cooking, allowing the flavors to blend.
