These soft, pillowy sweets are perfect for snacking on their own, melting into hot cocoa, or using in s’mores. Infused with cocoa powder and coated in a dusting of powdered sugar, chocolate marshmallows are easy to make at home and add an extra layer of indulgence to any occasion. Their light, melt-in-your-mouth quality makes them a fun, crowd-pleasing dessert for kids and adults alike.
Ingredients:
- 3/4 cup water, divided
- 1 tablespoon unflavored gelatin (or 3 packets)
- 1 1/2 cups granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar (for dusting)
- 1/4 cup cocoa powder (for dusting)
Instructions:
- Prepare the pan: Grease and line an 8×8-inch square baking pan with parchment paper. Dust the bottom with a mixture of powdered sugar and cocoa powder.
- Bloom the gelatin: In a large bowl or the bowl of a stand mixer, sprinkle the gelatin over 1/2 cup of cold water. Let it sit for 5-10 minutes to bloom.
- Make the sugar syrup: In a medium saucepan, combine the granulated sugar, corn syrup, cocoa powder, salt, and the remaining 1/4 cup water. Stir over medium heat until the sugar dissolves, then bring the mixture to a boil. Cook without stirring until it reaches 240°F (115°C) on a candy thermometer.
- Whip the marshmallow mixture: Carefully pour the hot sugar syrup over the bloomed gelatin while mixing on low speed. Increase the speed to high and whip for about 10-12 minutes, until the mixture becomes thick, glossy, and forms stiff peaks. Add the vanilla extract in the last minute of whipping.
- Set the marshmallows: Pour the marshmallow mixture into the prepared pan, smoothing the top with a spatula. Dust the top with more powdered sugar and cocoa powder. Let the marshmallows set for 4-6 hours, or overnight, at room temperature.
- Cut and serve: Once set, lift the marshmallow slab from the pan and cut it into squares with a greased knife. Dust the cut edges with the powdered sugar-cocoa mixture to prevent sticking.
These Chocolate Marshmallows are a delicious, homemade treat that combines the lightness of marshmallows with the richness of chocolate, making them a perfect addition to any dessert spread!
