Ingredients:

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • Salt, for seasoning
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning (or homemade)
  • 1/2 cup water
  • 1/2 cup black beans (optional)
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1 avocado, sliced
  • Fresh cilantro, chopped (optional, for garnish)
  • Lime wedges, for serving

Instructions:

  1. Bake the potatoes: Preheat the oven to 400°F (200°C). Rub the potatoes with olive oil and sprinkle with salt. Pierce each potato a few times with a fork. Place on a baking sheet and bake for 45-60 minutes, or until tender when pierced with a fork.
  2. Prepare the taco filling: While the potatoes are baking, heat a skillet over medium heat. Add the ground beef or turkey and cook until browned, breaking it up as it cooks. Drain any excess fat. Stir in the taco seasoning and 1/2 cup of water. Add the black beans (if using) and let the mixture simmer for 5 minutes.
  3. Assemble the baked potatoes: Once the potatoes are done, slice them open and fluff the insides with a fork. Spoon the taco meat mixture over each potato.
  4. Add toppings: Top the taco baked potatoes with shredded cheddar cheese, sour cream, salsa, avocado slices, and any other favorite taco toppings like chopped cilantro or lime wedges.

These Taco Baked Potatoes are a delicious and fun way to enjoy taco flavors in a new, comforting form—perfect for a filling and flavorful meal!
