Alaskan Sourdough Pancakes

Alaskan sourdough pancakes are a cherished tradition, deeply rooted in the history of the Alaskan pioneers who relied on sourdough starter as a staple in their kitchens. These pancakes are known for their unique tangy flavor and light, fluffy texture, making them a favorite for breakfast or brunch. The sourdough starter, which can be passed down through generations, adds a distinct taste that sets these pancakes apart from the regular variety. Perfect for a hearty breakfast, these pancakes pair wonderfully with butter, maple syrup, or a berry compote, bringing a taste of Alaskan heritage to your table.

Ingredients:

  • 1 cup sourdough starter
  • 1 cup all-purpose flour
  • 1 cup warm water
  • 1 tablespoon sugar
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 tablespoon milk or buttermilk
  • Butter or oil for cooking

Instructions:

  1. Prepare the Sponge (the night before):
    • In a large bowl, combine the sourdough starter, flour, warm water, and sugar. Mix until well combined.
    • Cover the bowl with a clean kitchen towel and let it sit at room temperature overnight. This allows the sponge to ferment and develop flavor.
  2. Make the Pancake Batter:
    • In the morning, uncover the sponge and give it a gentle stir.
    • In a separate small bowl, beat the egg and add it to the sponge along with the salt. Mix until fully incorporated.
    • Dissolve the baking soda in the milk or buttermilk, then stir it into the batter. The baking soda will react with the sourdough, causing the batter to bubble and rise slightly.
  3. Cook the Pancakes:
    • Preheat a griddle or large skillet over medium heat and lightly grease with butter or oil.
    • Pour about 1/4 cup of batter per pancake onto the hot griddle. Cook until bubbles form on the surface and the edges start to dry, about 2-3 minutes.
    • Flip the pancakes and cook for another 2-3 minutes, or until golden brown and cooked through.
  4. Serve:
    • Serve the pancakes hot with your favorite toppings, such as butter, maple syrup, fresh berries, or whipped cream.

Enjoy your Alaskan sourdough pancakes as a delightful start to your day, bringing a taste of tradition and warmth to your breakfast table.
