Italian Almond Cookies

Italian Almond Cookies, also known as Amaretti, are traditional Italian treats that have a delightful balance of crunchy exteriors and soft, chewy centers. Ingredients:

  • 2 cups almond flour
  • 1 cup granulated sugar

Instructions:

  1. Preheat the oven to 325°F (165°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, combine the almond flour, granulated sugar, and a pinch of salt. Stir until well mixed.
  3. In a separate bowl, beat the egg whites until soft peaks form. You want them fluffy but not too stiff.
  4. Gently fold the beaten egg whites into the almond flour mixture. Add the almond and vanilla extracts, and mix until you have a smooth dough.
  5. Shape the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, spacing them about 2 inches apart. If desired, press a few almond slices onto the tops for decoration.
  6. Lightly dust the cookies with powdered sugar for a delicate finish, if using.
  7. Bake for 15-18 minutes, or until the cookies are lightly golden on the edges but still soft in the center. The cookies will harden slightly as they cool.
  8. Cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
