Yogurt Fruit Salad

Yogurt Fruit Salad is a light, refreshing dish perfect for breakfast, brunch, or as a healthy snack. This salad combines a colorful mix of fresh fruits, all coated in a creamy, slightly tangy yogurt dressing that balances the natural sweetness of the fruit. Ingredients:

  • 1 cup plain or vanilla Greek yogurt
  • 1 tablespoon honey or maple syrup (optional, for sweetness)
  • 1/2 teaspoon vanilla extract (optional)
  • 1 apple, diced
  • 1 banana, sliced
  • 1 cup strawberries, hulled and halved
  • 1/2 cup blueberries
  • 1/2 cup grapes, halved
  • 1/2 cup pineapple chunks (fresh or canned)
  • 1/4 cup pomegranate seeds (optional)
  • 1/4 cup chopped nuts (almonds, walnuts, or pecans, optional)
  • 1 tablespoon chia seeds or flaxseeds (optional, for garnish)
  • Fresh mint leaves, for garnish (optional)

Instructions:

  1. Prepare the yogurt dressing: In a small bowl, mix the Greek yogurt with honey (if using) and vanilla extract until smooth and well combined.
  2. Prepare the fruit: Wash and prepare all the fruits by dicing the apple, slicing the banana, hulling and halving the strawberries, and halving the grapes. Combine the apple, banana, strawberries, blueberries, grapes, and pineapple in a large mixing bowl.
  3. Toss the fruit with yogurt: Gently fold the yogurt dressing into the fruit mixture, ensuring all the fruit is evenly coated.
  4. Add the toppings: Sprinkle pomegranate seeds, chopped nuts, chia seeds, or flaxseeds on top, if desired.
