TURKEY TACO BAKE

Ingredients:

  • 1 pound ground turkey

  • 1 cup frozen corn kernels
  • 1 can (10 ounces) diced tomatoes with green chilies, drained

  • 2 cups shredded Mexican blend cheese
  • 6 small flour or corn tortillas
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • Sour cream, avocado, and extra salsa for serving (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the Turkey:
    • In a large skillet, cook the ground turkey over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
    • Add the chopped onion and minced garlic to the skillet and cook for another 2-3 minutes until the onion is softened.
  3. Season and Add Ingredients:
    • Stir in the taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Cook for 5-7 minutes, stirring occasionally, until everything is heated through and well combined.
  4. Assemble the Bake:
    • Place two tortillas in the bottom of the prepared baking dish, overlapping as needed.
    • Spoon half of the turkey mixture over the tortillas and spread it out evenly.
    • Sprinkle 1/3 of the shredded cheese over the turkey mixture.
    • Repeat the layers with two more tortillas, the remaining turkey mixture, and another 1/3 of the cheese.
    • Top with the final two tortillas and the remaining cheese.
  5. Bake the Dish:
    • Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
