Orange Cream Cake

Ingredients:

  • For the Cake:
    • 1 1/2 cups all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 tablespoon orange zest
    • 1/2 cup fresh orange juice
    • 1/4 cup milk
    • 1 teaspoon vanilla extract
  • For the Cream Filling:
    • 1 1/2 cups heavy cream
    • 3 tablespoons powdered sugar
    • 1 teaspoon vanilla extract
    • 1 tablespoon orange zest
  • For the Orange Glaze/Frosting:
    • 1 cup powdered sugar
    • 2-3 tablespoons fresh orange juice
    • 1 teaspoon orange zest (optional)

Instructions:

  1. Make the Cake:
    • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
    • In a medium bowl, whisk together flour, baking powder, and salt.
    • In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, followed by the orange zest.
    • Gradually mix in the dry ingredients, alternating with the orange juice and milk, beginning and ending with the flour mixture. Stir in vanilla extract.
    • Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  2. Prepare the Cream Filling:
    • In a medium bowl, whip the heavy cream, powdered sugar, vanilla extract, and orange zest until stiff peaks form. Set aside in the refrigerator until ready to use.
  3. Assemble the Cake:
    • Once the cakes are completely cooled, spread the cream filling evenly over the top of one cake layer. Place the second cake layer on top.
  4. Make the Orange Glaze/Frosting:
    • In a small bowl, whisk together the powdered sugar, orange juice, and orange zest (if using) until smooth. Adjust the consistency by adding more orange juice if needed.
  5. Finish the Cake:
    • Drizzle the glaze over the top of the assembled cake, allowing it to drip down the sides. If you prefer, spread the glaze evenly over the top and sides for a more frosted look.

Enjoy this refreshing and decadent Orange Cream Cake as a perfect dessert for any special occasion!
