Tonkatsu

Tonkatsu is a popular Japanese dish that features a crispy, golden-brown pork cutlet that’s tender on the inside and bursting with flavor. Made by coating pork cutlets in panko breadcrumbs and then frying them to perfection, Tonkatsu is often served with a tangy, savory tonkatsu sauce, shredded cabbage, and a bowl of steamed rice. Ingredients:

  • 4 boneless pork loin chops (about 1/2 inch thick)
  • Salt and freshly ground black pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying

For Serving:

  • Tonkatsu sauce (store-bought or homemade)
  • Shredded cabbage
  • Lemon wedges
  • Steamed rice

Instructions:

  1. Prepare the Pork:
    • Place the pork chops between two sheets of plastic wrap and gently pound them with a meat mallet or rolling pin until they are about 1/4 inch thick. Season both sides with salt and pepper.
  2. Set Up the Breading Station:
    • Place the flour, beaten eggs, and panko breadcrumbs in three separate shallow dishes. Dredge each pork chop in the flour, shaking off any excess, then dip it into the beaten eggs, and finally coat it thoroughly with panko breadcrumbs, pressing the crumbs onto the meat to adhere.
  3. Fry the Tonkatsu:
    • Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot (about 350°F or 175°C), carefully add the breaded pork chops to the skillet. Fry for 3-4 minutes on each side, or until golden brown and crispy. Transfer the cooked Tonkatsu to a paper towel-lined plate to drain any excess oil.
  4. Serve:
    • Slice the Tonkatsu into strips and serve immediately with tonkatsu sauce drizzled on top or on the side for dipping. Accompany with shredded cabbage, lemon wedges, and steamed rice.
