Ingredients:

For the Pizza:

  • 1 pre-made pizza dough (store-bought or homemade)
  • 1/2 cup peanut sauce (store-bought or homemade)
  • 1 1/2 cups cooked chicken breast, shredded or diced
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup shredded carrots
  • 1/4 cup sliced red bell pepper
  • 2 green onions, sliced
  • 1 tablespoon chopped fresh cilantro
  • 1/4 cup chopped peanuts (optional, for garnish)
  • 1 teaspoon sesame seeds (optional)

For the Homemade Peanut Sauce (Optional):

  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon sriracha or other hot sauce (optional, for spice)
  • 1-2 tablespoons water (to thin the sauce, if needed)

Instructions:

  1. Prepare the Peanut Sauce: If making the sauce from scratch, combine the peanut butter, soy sauce, rice vinegar, honey, sesame oil, and sriracha in a small bowl. Whisk until smooth, adding water a little at a time until you reach your desired consistency.
  2. Preheat the Oven: Preheat your oven to 475°F (245°C). Place a pizza stone or baking sheet in the oven to heat.
  3. Prepare the Pizza Dough: Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer the dough to a piece of parchment paper for easy handling.
  4. Assemble the Pizza: Spread the peanut sauce evenly over the rolled-out pizza dough, leaving a small border around the edges for the crust. Sprinkle half of the shredded mozzarella cheese over the sauce. Top with the cooked chicken, shredded carrots, sliced red bell pepper, and green onions. Sprinkle the remaining cheese over the top.
  5. Bake: Carefully slide the pizza (on the parchment paper) onto the preheated pizza stone or baking sheet. Bake for 10-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  6. Garnish and Serve: Remove the pizza from the oven and let it cool for a minute. Sprinkle with chopped fresh cilantro, chopped peanuts, and sesame seeds, if using. Slice and serve.

Enjoy this Thai Chicken Pizza with a refreshing salad or on its own for a unique and satisfying meal that combines the best of Italian and Thai flavors!
