Ingredients:
- 8 oz. rotini pasta (or any twisted pasta)
- 1 lb. ground beef
- 1 small onion, chopped
- 1 packet taco seasoning mix
- 1 can (15 oz.) black beans, drained and rinsed
- 1 can (10 oz.) diced tomatoes with green chilies, undrained
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup sliced black olives (optional)
- Fresh cilantro, chopped (for garnish)
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
- Cook the pasta according to the package directions until al dente. Drain and set aside.
- In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is tender. Drain any excess fat.
- Add the taco seasoning mix to the beef and onion mixture, stirring well to combine.
