SWEET POTATO KALE FRITTATA

Sweet Potato Kale Frittata is a wholesome and flavorful dish perfect for breakfast, brunch, or even a light dinner. The sweetness of the roasted sweet potatoes pairs beautifully with the earthy kale, while the eggs provide a light, fluffy texture that binds everything together. This nutrient-packed frittata is easy to make and can be enjoyed hot or cold. It’s also a great make-ahead meal that can be sliced and stored for quick breakfasts throughout the week.

Ingredients:

  • 1 medium sweet potato, peeled and diced
  • 2 tablespoons olive oil, divided
  • 1 small onion, chopped
  • 3-4 cups kale, stems removed and roughly chopped
  • 8 large eggs
  • 1/4 cup milk or cream
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika (optional)
  • Salt and pepper, to taste
  • 1/2 cup shredded cheese (optional, such as feta, goat cheese, or cheddar)

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Lightly grease a 9-inch oven-safe skillet or baking dish.
  2. Roast the sweet potatoes: Toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized. Set aside.
  3. Sauté the onions and kale: In your oven-safe skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes, until softened. Add the chopped kale and cook for another 2-3 minutes until the kale wilts down.
  4. Prepare the egg mixture: In a large bowl, whisk together the eggs, milk, garlic powder, paprika (if using), salt, and pepper. Stir in the roasted sweet potatoes and shredded cheese, if using.
  5. Combine and cook: Pour the egg mixture into the skillet with the onions and kale, stirring gently to distribute the vegetables evenly. Let the mixture cook on the stovetop over medium heat for 2-3 minutes, until the edges begin to set.
  6. Bake the frittata: Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are set and the frittata is golden brown on top. If you want a more browned top, broil for 1-2 minutes, but keep an eye on it to avoid burning.
  7. Serve: Let the frittata cool slightly before slicing. Serve warm, or at room temperature, with a side salad or fresh fruit.

This Sweet Potato Kale Frittata is packed with nutrition and flavor, making it a satisfying and healthy meal that’s easy to make and perfect for any time of day!
