  • 1 teaspoon cumin
  • 1 cup long-grain white rice, rinsed
  • 1 cup chicken broth
  • 1 cup salsa
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 bell pepper, diced
  • 1 cup shredded cheese (optional)
  • Fresh cilantro, chopped (for garnish)
  • Avocado, sliced (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Prepare the Instant Pot:
    • Set the Instant Pot to “Sauté” mode. Add the olive oil to the pot.
  2. Cook the Chicken:
    • Season the chicken pieces with salt, pepper, garlic powder, onion powder, chili powder, and cumin.
    • Add the seasoned chicken to the Instant Pot and sauté until browned on all sides, about 5 minutes.
  3. Add the Ingredients:
    • Turn off the “Sauté” mode. Add the rice, chicken broth, salsa, black beans, corn, and bell pepper to the pot. Stir to combine, ensuring the rice is submerged in the liquid.
  4. Pressure Cook:
    • Secure the lid on the Instant Pot and set it to “Manual” or “Pressure Cook” mode on high pressure for 8 minutes.
    • Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release to release any remaining pressure.
  5. Finish and Serve:
    • Carefully remove the lid and fluff the rice with a fork. Stir in the shredded cheese, if using, until melted and combined.
    • Serve the burrito bowl hot, garnished with fresh cilantro, avocado slices, and lime wedges. Enjoy!
