Ideal for a leisurely Sunday meal, this recipe is simple to prepare yet delivers a depth of flavor that will make it a favorite in your home.

Ingredients:

  • 4 bone-in, skin-on chicken thighs (or a mix of thighs and drumsticks)
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1/2 cup white wine (optional, or substitute with more chicken broth)
  • 1/4 cup heavy cream
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C).
  2. Season the chicken: Pat the chicken pieces dry with paper towels and season generously with salt, pepper, thyme, rosemary, and paprika.
  3. Sear the chicken: In a large, oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken, skin side down, and sear for 5-7 minutes, until the skin is golden brown and crispy. Flip the chicken and sear the other side for an additional 3-4 minutes. Remove the chicken from the skillet and set it aside.
  4. Sauté the onions and garlic: In the same skillet, add the sliced onion and sauté for 4-5 minutes, until softened and beginning to caramelize. Add the minced garlic and cook for another minute, until fragrant.
  5. Deglaze the pan: Pour in the white wine (if using) and chicken broth, stirring to deglaze the pan and scrape up any browned bits from the bottom. Let the mixture simmer for 2-3 minutes, reducing slightly.
  6. Combine and cook: Return the seared chicken to the skillet, skin side up, and spoon some of the sauce over the top. Cover the skillet with a lid or foil, and transfer it to the preheated oven. Bake for 30-35 minutes, or until the chicken is cooked through and tender.
  7. Finish the sauce: Remove the skillet from the oven and place it back on the stovetop. Stir in the heavy cream and let the sauce simmer for a few minutes until it thickens slightly. Adjust seasoning with salt and pepper to taste.
  8. Serve: Garnish the Sunday Chicken with fresh parsley if desired, and serve hot with your favorite sides.

Sunday Chicken is a comforting, flavorful dish that’s perfect for a relaxing family meal. Its rich sauce and tender chicken make it a dish that’s both satisfying and easy to love, ideal for any Sunday dinner tradition.
