Spiced Rum and Pear Cake

Spiced Rum and Pear Cake is a beautifully aromatic dessert that marries the rich flavors of spiced rum with the sweet, juicy essence of fresh pears. This moist and flavorful cake features warm spices like cinnamon and nutmeg, which complement the tender pears and the subtle kick of rum. The addition of a spiced rum glaze further enhances the cake’s depth of flavor, making it a standout choice for fall gatherings, holiday celebrations, or a cozy afternoon treat. This cake is both sophisticated and comforting, offering a perfect balance of sweetness and spice in every slice.

Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1/2 cup spiced rum
  • 1/2 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 ripe pears, peeled, cored, and diced

For the Rum Glaze:

  • 1/2 cup powdered sugar
  • 2 tbsp spiced rum
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. Prepare the Cake Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract. Gradually add the flour mixture to the butter mixture, alternating with the milk and spiced rum, beginning and ending with the flour mixture. Mix until just combined.
  3. Fold in Pears: Gently fold the diced pears into the batter until evenly distributed.
  4. Bake the Cake: Pour the batter into the prepared cake pan and spread it evenly. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  5. Prepare the Rum Glaze: In a small bowl, whisk together the powdered sugar, spiced rum, and vanilla extract until smooth. Adjust the consistency by adding more powdered sugar or rum if necessary.
  6. Glaze and Serve: Once the cake has cooled, drizzle the rum glaze over the top, allowing it to cascade down the sides. Let the glaze set before slicing.
  7. Enjoy: Serve the Spiced Rum and Pear Cake as a sophisticated and comforting dessert, perfect for impressing guests or enjoying a sweet moment on your own. It pairs wonderfully with a dollop of whipped cream or a scoop of vanilla ice cream.
