Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small bell pepper, chopped
  • 1 cup tomato sauce
  • 1 3/4 cups chicken or vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup frozen peas
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Rinse the Rice: Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Sauté the Vegetables: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté for about 5 minutes, or until the onion is translucent and the bell pepper is softened.
  3. Toast the Rice: Add the rinsed rice to the skillet and cook, stirring frequently, for 2-3 minutes until the rice is lightly toasted.
  4. Add the Tomato Sauce and Spices: Stir in the tomato sauce, broth, cumin, smoked paprika, chili powder, salt, and pepper. Bring the mixture to a boil.
  5. Simmer the Rice: Reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Add the Peas: In the last 5 minutes of cooking, add the frozen peas to the rice and stir to combine.
  7. Fluff and Serve: Remove the skillet from heat and let the rice sit, covered, for a few minutes. Fluff the rice with a fork and garnish with fresh cilantro before serving.

Enjoy your delicious Spanish Rice as a delightful side dish that adds a touch of color and flavor to your meal!
