Ingredients:

  • 4 white fish fillets (such as cod, tilapia, or halibut)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 cup green olives, pitted and sliced
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon saffron threads (optional)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 cup white wine or fish stock
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving

Instructions:

  1. Season the Fish:
    • Season the fish fillets with salt and pepper on both sides. Set them aside while you prepare the sauce.
  2. Sauté the Vegetables:
    • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened. Add the minced garlic, red bell pepper, and yellow bell pepper, and continue to sauté for another 5 minutes until the peppers are tender.
  3. Add the Tomatoes and Spices:
    • Stir in the diced tomatoes, sliced olives, smoked paprika, saffron threads (if using), dried thyme, and oregano. Cook for 2-3 minutes, allowing the flavors to blend.
  4. Simmer the Sauce:
    • Pour in the white wine or fish stock, stirring to combine. Bring the mixture to a simmer and let it cook for about 5-7 minutes until the sauce slightly thickens.
  5. Cook the Fish:
    • Nestle the fish fillets into the sauce, spooning some of the sauce over the top of each fillet. Cover the skillet with a lid and simmer for 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Garnish and Serve:
    • Remove the skillet from heat and garnish the Spanish Fish with chopped fresh parsley. Serve with lemon wedges on the side for squeezing over the fish.

Spanish Fish is a delightful and vibrant dish that brings the flavors of the Mediterranean to your table. Its combination of tender fish, aromatic vegetables, and rich tomato sauce makes it a delicious and satisfying meal that’s perfect for any occasion.
