Ingredients:

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil, divided
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons pine nuts or sunflower seeds (optional, for crunch)

For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions:

  1. Roast the Spaghetti Squash:
    • Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
    • Drizzle the cut sides with 1 tablespoon of olive oil and season with salt and black pepper. Place the squash halves cut-side down on a baking sheet and roast for 35-40 minutes, or until the flesh is tender and easily shredded with a fork.
    • Once cooked, use a fork to scrape the flesh into strands and let it cool slightly.
  2. Prepare the Dressing:
    • In a small bowl, whisk together the olive oil, lemon juice, balsamic vinegar, Dijon mustard, minced garlic, salt, and black pepper until well combined.
  3. Assemble the Salad:
    • In a large mixing bowl, combine the cooled spaghetti squash strands with the cherry tomatoes, cucumber, red onion, parsley, and basil. Toss gently to combine.
    • Drizzle the salad with the prepared dressing and toss again until the salad is evenly coated.
  4. Add Toppings:
    • If desired, sprinkle the salad with crumbled feta cheese and pine nuts or sunflower seeds for added texture and flavor.
  5. Serve:
    • Serve the Spaghetti Squash Salad chilled or at room temperature. It can be enjoyed on its own or as a side dish to your favorite protein.
