Ingredients

  • 1 large spaghetti squash
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Prepare the Spaghetti Squash: Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside with 1 tablespoon of olive oil and season with salt and pepper. Place the squash halves cut-side down on a baking sheet and roast for 35-40 minutes, or until the flesh is tender and easily shredded with a fork. Let it cool slightly, then use a fork to scrape the strands into a bowl. Reduce the oven temperature to 375°F (190°C).
  2. Cook the Vegetables: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the onion and garlic, and sauté until fragrant, about 2 minutes. Add the bell pepper, zucchini, and mushrooms, and cook until the vegetables are softened, about 5-7 minutes. Stir in the oregano, basil, and red pepper flakes, if using. Season with salt and black pepper to taste.
  3. Assemble the Casserole: In a large mixing bowl, combine the cooked spaghetti squash, sautéed vegetables, and marinara sauce. Stir in the ricotta cheese until well mixed.
  4. Layer the Casserole: Spread half of the spaghetti squash mixture into a greased 9×13-inch baking dish. Sprinkle half of the mozzarella and Parmesan cheese over the top. Repeat with the remaining spaghetti squash mixture and cheeses.
  5. Bake the Casserole: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
  6. Serve: Let the casserole cool for a few minutes before serving. Garnish with fresh basil leaves if desired, and enjoy!

Spaghetti Squash Casserole is a delicious and comforting dish that’s packed with flavor and nutrition, making it a perfect choice for a wholesome meal. Enjoy the blend of vegetables, rich sauce, and melted cheese in every bite!
