Ingredients:

    • 1/4 cup red onion, finely chopped
    • 1/4 cup fresh cilantro, chopped
    • 1 avocado, diced (optional)
    • 1 tablespoon lime juice
    • Salt and black pepper, to taste

Instructions:

  1. Marinate the Chicken:
    • In a large bowl, whisk together the olive oil, lime juice, minced garlic, ground cumin, smoked paprika, chili powder, ground coriander, onion powder, salt, and black pepper.
    • Add the chicken breasts to the marinade, turning to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  2. Prepare the Southwest Topping:
    • In a medium bowl, combine the black beans, corn, cherry tomatoes, red onion, fresh cilantro, and diced avocado (if using).
    • Drizzle with lime juice and season with salt and black pepper. Toss gently to combine. Set aside.
  3. Cook the Chicken:
    • Preheat a grill or large skillet over medium-high heat. Once hot, cook the marinated chicken breasts for 6-8 minutes on each side, or until fully cooked through and no longer pink in the center. The internal temperature should reach 165°F (74°C).
