Ingredients:

  • 4 bone-in pork chops (about 1 inch thick)
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2-3 chipotle peppers in adobo sauce, chopped (adjust to taste)
  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup chicken broth

Instructions:

  1. Prepare the Pork Chops:
    • Season the pork chops with salt and pepper on both sides.
    • In a large skillet, heat the vegetable oil over medium-high heat. Sear the pork chops for 2-3 minutes on each side until they are browned. Transfer the pork chops to the slow cooker.
  2. Make the Sauce:
    • In the same skillet, add the chopped onion and cook for about 3-4 minutes until softened.
    • Add the minced garlic and cook for another minute until fragrant.
    • Stir in the diced tomatoes, chipotle peppers, apple cider vinegar, honey, ground cumin, smoked paprika, oregano, and cinnamon. Bring the mixture to a simmer and cook for 5 minutes to allow the flavors to meld.
  3. Slow-Cook the Pork Chops:
    • Pour the sauce over the pork chops in the slow cooker.
    • Add the chicken broth to the slow cooker, ensuring the pork chops are mostly covered by the liquid.
    • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the pork chops are tender and cooked through.
  4. Serve:
    • Serve the chipotle pork chops with the sauce spooned over the top. Garnish with fresh cilantro if desired.

Enjoy your Slow-Cooker Chipotle Pork Chops, a delicious and easy-to-make dish with a perfect blend of smoky and spicy flavors!
