GREEK SHEET-PAN CHICKEN

Ingredients:

  • 4 bone-in, skin-on chicken thighs (or breasts)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 1 zucchini, sliced
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease it.
  2. Marinate the chicken: In a bowl, whisk together olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Add the chicken thighs and toss to coat. Let the chicken marinate for at least 15 minutes or up to a few hours for extra flavor.
