  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 tablespoon sesame oil
  • 1 cup sliced mushrooms
  • 1 cup spinach or bok choy
  • 2 green onions, chopped
  • 1 soft-boiled egg (optional)
  • Red pepper flakes or sriracha (optional for heat)
  • Sesame seeds for garnish

Instructions:

  1. Prepare the Broth: In a large pot, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant, about 1 minute. Add mushrooms and cook until softened, about 3-4 minutes.
  2. Simmer: Pour in the chicken or vegetable broth, soy sauce, and miso paste (if using). Stir well to combine and bring the mixture to a gentle boil.
  3. Cook the Noodles: Add the ramen noodles to the boiling broth. Cook according to the package instructions, usually 3-4 minutes, until the noodles are tender.
  4. Cook the Shrimp: Add the shrimp to the pot during the last 2 minutes of cooking the noodles. Shrimp cooks quickly and will turn pink and opaque when done.
  5. Add Vegetables: In the final minute of cooking, stir in the spinach or bok choy until just wilted.
