Sheet-Pan Chicken Curry is a simple and delicious meal that combines the vibrant flavors of curry spices with the convenience of a one-pan dish. Ingredients

  • 1 ½ pounds (680g) bone-in, skin-on chicken thighs
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 can (14 oz/400 ml) coconut milk
  • 1 cup cherry tomatoes, halved
  • 1 cup cauliflower florets
  • Fresh cilantro for garnish
  • Cooked rice or naan bread, for serving

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Chicken:
    • In a small bowl, mix together the curry powder, cumin, coriander, turmeric, paprika, salt, and pepper.
    • Rub the spice mixture all over the chicken thighs, ensuring they are well-coated.
  3. Assemble the Sheet Pan:
    • Drizzle 1 tablespoon of olive oil over a large sheet pan.
    • Place the chicken thighs on the pan, skin side up.
    • Scatter the sliced onion, garlic, ginger, red and green bell peppers, cherry tomatoes, and cauliflower around the chicken.
  4. Add Coconut Milk:
    • Pour the coconut milk over the vegetables and chicken, gently stirring the vegetables to coat them in the milk.
  5. Roast:
    • Drizzle the remaining 1 tablespoon of olive oil over the entire pan.
    • Roast in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
  6. Garnish and Serve:
    • Remove the sheet pan from the oven and let it rest for a few minutes.
