SEASONED COUSCOUS

Seasoned Couscous is a quick, versatile, and flavorful side dish that pairs well with a variety of main courses. The light, fluffy texture of couscous combined with aromatic spices and herbs makes it an ideal accompaniment to grilled meats, roasted vegetables, or stews. This dish is easy to prepare and can be customized with your favorite herbs and add-ins like nuts, dried fruits, or vegetables.

Ingredients:

  • 1 cup couscous (whole wheat or regular)
  • 1 1/4 cups chicken broth or vegetable broth
  • 1 tablespoon olive oil or butter
  • 1 small onion, finely chopped (optional)
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric (optional, for color)
  • 1/4 teaspoon paprika
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup fresh parsley or cilantro, chopped
  • 1 tablespoon fresh lemon juice (optional, for brightness)
  • Optional add-ins: chopped dried fruit (such as apricots or raisins), toasted nuts (such as almonds or pine nuts), or crumbled feta cheese

Instructions:

  1. Prepare the Aromatics:
    • In a medium saucepan, heat the olive oil or butter over medium heat. If using, add the chopped onion and sauté until soft and translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  2. Toast the Spices:
    • Stir in the cumin, coriander, turmeric (if using), and paprika. Cook for about 1 minute, allowing the spices to become fragrant.
  3. Add the Broth:
    • Pour in the chicken or vegetable broth and bring the mixture to a boil.
  4. Cook the Couscous:
    • Stir in the couscous, cover the saucepan, and remove it from the heat. Let the couscous steam for about 5 minutes, or until all the liquid is absorbed.
  5. Fluff and Season:
    • After 5 minutes, uncover the saucepan and fluff the couscous with a fork. Stir in the chopped parsley or cilantro, and if using, add the lemon juice. Season with salt and freshly ground black pepper to taste.
  6. Optional Add-ins:
    • For added flavor and texture, stir in chopped dried fruit, toasted nuts, or crumbled feta cheese.
  7. Serve:
    • Serve the seasoned couscous warm as a side dish, paired with your favorite main course.

Enjoy this flavorful and easy Seasoned Couscous as a delicious side that complements a variety of meals!
