Savory French Toast Casserole is a delicious twist on the classic sweet breakfast dish, offering a rich, hearty, and flavorful alternative. This casserole combines cubes of crusty bread with eggs, milk, and a savory blend of cheese, herbs, and vegetables like spinach or mushrooms. It’s perfect for a make-ahead breakfast or brunch, where the flavors deepen as the ingredients meld together overnight. Baked until golden and bubbly, this dish is a satisfying, comforting meal that can be served on its own or with a side salad for any time of day.

Ingredients:

  • 1 loaf of crusty bread (day-old works best), cubed
  • 6 large eggs
  • 2 cups milk or half-and-half
  • 1 cup shredded cheddar or Gruyere cheese
  • 1 cup cooked spinach or sautéed mushrooms (optional)
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder
  • 1 tsp dried thyme or Italian seasoning
  • Salt and pepper, to taste
  • 2 tbsp butter, melted
  • ¼ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Grease a 9×13-inch baking dish and spread the cubed bread evenly across the bottom.
  2. In a large bowl, whisk together the eggs, milk, Dijon mustard, garlic powder, thyme, salt, and pepper.
  3. Stir in the shredded cheddar or Gruyere cheese and any vegetables like spinach or mushrooms, if using.
  4. Pour the egg mixture evenly over the bread cubes, pressing the bread down slightly to absorb the mixture.
  5. Drizzle the melted butter over the top and sprinkle with grated Parmesan cheese.
  6. Cover and refrigerate for at least 30 minutes, or overnight if making ahead, to allow the flavors to meld.
  7. Preheat your oven to 350°F (175°C). Bake the casserole uncovered for 40-45 minutes, or until the top is golden and the center is set.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.

Serve warm and enjoy this savory twist on French toast with family and friends!
