Sausage Manicotti is a rich and hearty Italian-American dish that combines savory sausage, creamy ricotta, and perfectly cooked pasta, all baked together under a blanket of marinara sauce and melted cheese. This comforting casserole is the ultimate crowd-pleaser, perfect for family dinners, gatherings, or when you’re craving something warm and satisfying. The tender manicotti shells are stuffed with a flavorful sausage and cheese filling, then baked until bubbly and golden. Each bite offers a delightful combination of textures and flavors, making Sausage Manicotti a dish that’s both comforting and indulgent.

Ingredients:

  • 1 pound Italian sausage, casings removed
  • 12 manicotti shells
  • 2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese (divided)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (plus more for garnish)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper, to taste
  • 3 cups marinara sauce (store-bought or homemade)
  • Fresh basil, for garnish (optional)

Instructions:

  1. Cook the Manicotti Shells: Bring a large pot of salted water to a boil. Cook the manicotti shells according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. Cook the Sausage: In a large skillet, cook the Italian sausage over medium heat until browned and fully cooked, breaking it up with a spoon as it cooks. Add the minced garlic and cook for another minute until fragrant. Remove from heat and let it cool slightly.
  3. Prepare the Filling: In a large bowl, combine the ricotta cheese, 1 cup of the shredded mozzarella cheese, Parmesan cheese, egg, chopped parsley, dried oregano, ground nutmeg, salt, and black pepper. Stir in the cooked sausage and garlic until well mixed.
  4. Stuff the Manicotti: Preheat your oven to 375°F (190°C). Spread 1 cup of marinara sauce evenly over the bottom of a 9×13-inch baking dish. Using a spoon or a piping bag, carefully fill each manicotti shell with the sausage and cheese mixture. Place the stuffed shells in a single layer in the prepared baking dish.
  5. Assemble and Bake: Pour the remaining marinara sauce over the filled manicotti shells, ensuring they are well-covered. Sprinkle the remaining 1/2 cup of mozzarella cheese over the top. Cover the dish with aluminum foil.
  6. Bake: Bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the top is golden brown.
  7. Garnish and Serve: Remove the manicotti from the oven and let it cool for a few minutes. Garnish with additional chopped parsley or fresh basil, if desired. Serve hot.

Sausage Manicotti is a deliciously comforting dish that’s perfect for any occasion. The combination of savory sausage, creamy ricotta, and rich marinara sauce creates a meal that’s both filling and full of flavor. Whether you’re serving it to guests or enjoying a cozy family dinner, this dish is sure to be a hit!
