Roasted Chicken Enchiladas are a flavorful and comforting dish that combines tender, shredded roasted chicken with a rich and zesty enchilada sauce, all wrapped in soft tortillas and baked to perfection. The roasted chicken adds depth and juiciness, while the melted cheese on top brings everything together in a bubbly, golden layer. This dish is perfect for a family dinner or when you want to impress guests with a homemade Mexican-inspired meal. Serve these enchiladas with a side of rice, beans, or a fresh salad for a complete and satisfying feast.

Ingredients:

  • 2 cups shredded roasted chicken
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, chopped (for garnish)
  • Sour cream and sliced avocado (for serving)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant, about 5 minutes. Stir in the shredded roasted chicken, ground cumin, smoked paprika, salt, and pepper. Cook for another 2-3 minutes until the chicken is heated through and well seasoned.
  3. Assemble the Enchiladas: Warm the tortillas slightly to make them more pliable. Spoon about 2 tablespoons of the chicken mixture onto the center of each tortilla, then roll it up tightly. Place the filled tortillas seam-side down in the prepared baking dish.
  4. Add the Sauce and Cheese: Pour the enchilada sauce evenly over the rolled tortillas, making sure they are fully covered. Sprinkle the shredded cheese on top.
  5. Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the edges of the tortillas are slightly crispy.
  6. Garnish and Serve: Remove the enchiladas from the oven and let them cool for a few minutes. Garnish with fresh cilantro and serve with sour cream and sliced avocado on the side.

Enjoy your Roasted Chicken Enchiladas as a delicious and comforting meal that’s packed with flavor and sure to be a hit with everyone at the table!
