Ingredients:

  • 1 tablespoon vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (14-ounce) can coconut milk
  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan bread (for serving)

Instructions:

  1. Sauté the aromatics:
    • In a large skillet or saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
    • Add the minced garlic and grated ginger, and cook for another 1-2 minutes, until fragrant.
  2. Add the spices:
    • Stir in the curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper (if using). Cook the spices for 1 minute, stirring constantly, to toast them and enhance their flavors.
  3. Add the liquids and chickpeas:
    • Pour in the diced tomatoes (with their juices) and coconut milk, stirring to combine.
    • Add the drained and rinsed chickpeas to the skillet, stirring to coat them in the sauce.
  4. Simmer the curry:
    • Bring the mixture to a gentle simmer and let it cook for about 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
    • Season with salt and pepper to taste.
  5. Serve and garnish:
    • Remove the curry from the heat and let it sit for a few minutes to thicken further.
    • Serve the Quickpea Curry over cooked rice or with warm naan bread.
    • Garnish with freshly chopped cilantro before serving.
