Ingredients:
For the dough:
- 2 cups masa harina (corn flour)
- 1 ½ cups warm water
- ¼ tsp salt
For the fillings:
- 1 cup shredded mozzarella cheese (or a Salvadoran cheese like quesillo)
- 1 cup refried beans (optional)
- 1 cup cooked and shredded pork (optional)
For serving:
- Curtido (Salvadoran cabbage slaw)
- Salsa roja
Instructions:
- In a large mixing bowl, combine the masa harina, warm water, and salt. Mix until a smooth dough forms, adding a little more water if the dough is too dry. The dough should be soft but not sticky.
- Divide the dough into 8 equal portions and roll each portion into a ball.
- Flatten each ball into a disc about 4 inches wide, using your hands or a tortilla press.
- Place about 2 tablespoons of your desired filling (cheese, beans, pork, or a combination) in the center of each disc. Fold the edges over the filling, sealing it inside the dough, and gently flatten again into a thick disc, being careful not to let the filling spill out.
- Heat a griddle or skillet over medium heat. Cook the pupusas for about 3-4 minutes on each side, until golden brown and crispy on the outside.
