Claypot Chicken Rice

Claypot Chicken Rice is a comforting and flavorful dish, often found in Southeast Asian cuisine, particularly in Malaysia and Singapore. This one-pot meal features marinated chicken, Chinese sausage, mushrooms, and rice, all cooked together in a claypot to create a deliciously smoky, crispy layer of rice at the bottom. Ingredients

  • 2 cups jasmine rice, rinsed and drained
  • 4 boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 Chinese sausages (lap cheong), thinly sliced
  • 4 dried shiitake mushrooms, soaked and sliced
  • 1 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sesame oil
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 2 green onions, sliced for garnish
  • Fresh cilantro for garnish (optional)

Instructions

  1. Marinate the chicken: In a bowl, combine the soy sauce, oyster sauce, dark soy sauce, sesame oil, Shaoxing wine, garlic, and ginger. Add the chicken pieces and toss to coat. Let it marinate for at least 20 minutes.
  2. Prepare the rice: Heat a claypot (or heavy-bottomed pot) over medium heat and add the vegetable oil. Add the drained rice and enough water to cover the rice by about 1/2 inch. Cover and bring to a boil, then reduce the heat to low and simmer for about 10 minutes, or until the rice is halfway cooked.
  3. Add the toppings: Once the rice is halfway cooked, arrange the marinated chicken, Chinese sausage slices, and shiitake mushrooms on top of the rice. Cover the pot and cook for another 15-20 minutes, or until the chicken is fully cooked and the rice is tender. You’ll want to check occasionally to ensure the rice doesn’t burn, but some crispy rice at the bottom is desirable.
  4. Serve: Once cooked, turn off the heat and let the pot sit, covered, for a few minutes to allow the flavors to meld. Garnish with sliced green onions and fresh cilantro if desired, and serve hot.
